Ingredients
  • 1 Acorn or Butternut squash
  • 1 large baking apple, unpeeled, cutchunks (Cortland or Granny Smith are good)
  • 2 Tblsp. butter
  • 2 Tblsp. brown sugar
  • chopped walnuts
  • cinnamon
Instructions
  1. ♦ Preheat oven to 375 degrees.
  2. ♦ Spray a pan or baking dish with cooking spray.
    ♦ I also pour a bit of water into the bottom, just to make clean-up easier.
  3. ♦ Wash and cut squash in half. Remove seeds. Bake, cut side down, for 30 minutes.
    ♦ Remove squash from oven and turn it over.
    ♦ Fill center of each with ½ of a chopped apple, mixed with browned sausage if you like!
    ♦ Dot each with 1 Tblsp. butter.
    ♦ Sprinkle each with walnuts.
    ♦ Sprinkle each with 1 Tblsp. brown sugar and a couple shakes of cinnamon.
  4. ♦ Bake for 30 minutes more, or until squash and apples are fork tender
Terri’s Notes

~ Add your favorite sausage for a nice touch that makes this a whole meal. I like sage or maple flavored bulk sausage. Just brown, drain and mix with the raw apple.

~ For a deconstructed version, peel and cube squash, layer into a buttered baking dish and layer on toppings. Bake at 350 degrees for one hour or until squash is tender.
