Ingredients
  • 1 cup dry oatmeal - she uses old fashioned oats
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup ground flax seed
  • 1/3 cup mini-chocolate chips - or cocoa nibs to make it healthier
  • 1/4 cup honey
  • 1 Tblsp. chia seeds - optional
  • 1 Tblsp. vanilla extract
Instructions
  1. ♦ Stir all ingredients together in a medium bowl until thoroughly mixed.
    ♦ Cover and let chill in the refrigerator for half an hour.
    ♦ Once chilled, roll into balls of whatever size you would like.
    ♦ JJ likes making them on the small side... about 1” in diameter.
  2. ♦ Makes about 20-25 Energy Bites

From JJ, “This is a recipe we use ALL the time. It’s great for breakfast or a quick snack. I usually make a double batch and freeze half.  It’s fun to experiment with the ingredients too. Just be aware that using other nut butters (like almond butter) tends to make the energy bites fall apart more easily. My kids love these, and so do I!”
